Something being visible simply means that light bounces off it and into your eye. Invisible would mean that light flows around you, unbroken, or right through you. In other words - there is nothing for light to bounce off of. You couldn't absorb the light, because you'd end up seeing something - think a black hole. The object itself may not be visible, but the boundary between visible light and invisible light would be noticable, rather defeating the purpose.

Option 2 is well known - misdirection. Any illusionist knows that trick.

Option 3 is what the military is working on, an network of cameras and micro-screens, that will project what is behind the person onto micro screens on the front of the person. The biggest challenge there is that the viewer has to be directly in line of sight. There are ways to deal with that, but once you start to get multiple lines of sight, things become difficult.
