I would say that you should prepair no less than 2 pounds per guest. I should know because I'm on a carne asada diet. I can shamelessly eat about 2 pounds of this in one sitting and thats not counting the tortillas, onions, cilantro and salsa. Don't forget the avocados and tequila.
