Mass is important in science because we need to measure and quantify things.

The chemist might be finding the mass of a given volume of an unknown material to discover its density. This will help identify the material. Additionally, when we measure things in the laboratory to perform chemical experiments, the knowledge of the mass of a material we are working with will allow us to gain knowledge of what happens in chemical reactions. Certainly measuring mass is done all the time in chemical engineering.

In the physics lab, we need to know the mass of things to make calculations regarding force, acceleration, momentum and the like. Mass is a variable in all those equations, and it cannot be ignored. A knowledge of mass and how to measure it are fundamental tools in the investigator's kit.
