The study of physics, and indeed of any science, is thoroughly dependent on accurate and repeatable measurements. These measurements must be repeatable not only by one scientist on many occasions, but also my many scientists. In order for this to happen, for measurements to be repeatable, all the scientists must be using accurately standardized units of measure. Imagine what would happen if my meter and your meter were different, so that when I say one meter it is equal to your 99 centimeters? Answer: we really couldn't do any science because our measurements would not be repeatable.

This is not to say that everybody has to use the same units. I can measure in inches while you measure in meters, as long as my inch is always equal to 0.0254 of your meters. But if either my inches or your meters vary from this then we are both out of luck.
