Contrary to popular belief, weather does not play a part in triggering the leaves to fall. Rather, the shortened amount of daylight during winter reduces the amount of photosynthesis the tree can generate. In order to save energy the tree must shed any extra surface area; in this case, the leaves.
They mostly do it in their leaves because that is where the choloroplast is and it holds cholorophyll that causes photosynthesis which is the process of making food for a plant.
