Lutein is what makes pistachios green.

It is NOT chlorophyll. Pistachios are not technically a nut. rather they are a fruit. the "shell" of the pistachio is more akin to a banana peel. Chlorophyll is uses sunlight to make energy for the plant, so it would need to be in the shell to provide any value. There is a red covering inside the shell and before the kernal. When roasted this covering contracts. That is the little brownish stuff that falls out when you open it.

Lutein is actually used to inhibit the energy production in plants, by interfering with chlorophyll. I'm not sure why it is in the kernal. If I were to bet, I would hypothesize that it is to slow the decay after the fruit has fallen.
