Cattle can get nitrate poisoning if they eat the roots and seeds of cabbage, rape, turnips, broccoli or mustard. The nitrate poisoning converts hemoglobin to a non-oxygen carrying form and the animal dies of a lack of oxygen. The high sulfur content of the mustard family can also cause infertility, poor conditioning and anemia of the female.
