Usually, the first sprout from an amaryllis is the flower bud, growing at the top of the first of usually two stems. Leaves emerge with, or after, the second stem.

It's sounds like the two dead pieces were the first flower bud/stem and possibly the tip of the second also.

You don't say if you bought as part of a kit, or a bare bulb, or a plant...but now you have leaves. If they are healthy, I would keep and look after the plant -- with care, it can bloom beautifully for next holiday season, but isn't likely to bloom again just now (though there are amaryllis that bloom more than once a year, it's fairly unusual).
