First, it's probably not true that people "hate" Texans. More accurately, there are people who strongly dislike a certain state's governor or policies or attitudes, or even their sports teams. Some of this is mainly a rivalry, such as baseball fans in Boston saying they "hate" the New York Yankees and the fans in New York saying they "hate" the Boston Red Sox. Sometimes it's political-- people who did not like the policies of George W. Bush, for example, transferred their dislike to the state where he was governor.
Historically, there have been stereotypes of Texans as rude or arrogant, and these stereotypes may go back to the days of the old west, when there were rivalries between cowboys from different parts of the country. There have also, unfortunately, been stereotypes of southerners (including Texans) as uneducated and not very intelligent. But most people today do not hold these stereotypes.
Perhaps the people you are meeting who say they hate Texans had a bad experience with some person who came from Texas, or they visited Texas and found it unpleasant for some reason. In either case, it is not very logical to blame all Texans for the actions of a small number, and people who hold such prejudiced views are probably not worth worrying about.
