There are a number of ways to assess stress but connecting that in a quantitative way to the rate of injury or disease has not been developed to a level that doing so is useful in dealing with any one particular workplace. Most agree that a more stressful workplace is one that is more likely to have a higher rate of injury and stress-related disease, and reducing stress is a good thing to do.

But for injury reduction, mistake-proofing various functions is usually a more productive approach, and more readily quantified and justified than a single focus on stress.
