My uneducated guess is that it's a response similar to fight of flight. The body releases chemicals in response to 'stressful' situations that increase heart rate and a list of other things. Essentially it's a combination of anxiety (excited to see/talk to this person) and natural body response. My advise? Deep breathing... and realizing that no matter how fabulous you think this person is... they're still human, and I assume you know how to talk to humans :)
