Never mind which is easiest. Take the course that is the most fun, and the most useful in life: the History of Texas. Psychology is for people who don't understand people. Sociology is for people who don't understand society. History is for people who do understand. Whatever class you choose, it depends alot in the instructor's teaching techniques, terminology (specially if none are you field of study or interest), methods of applying tests, and even yourself in how well you study for any class. Knowing about what happens many centuries ago in Texas won't help you that much in everyday life, but it will get you notion what happened before in history and the govermental evolution of the state itself. Psychology and Sociology help you to superficially understand how your family, society and your culture have contributed to what you really are today as individual.
People that are involved in psychology are people that like to study a persons mind. The people on the other spectrum are the patients that have a mental disorder.
