'ME' in English dictionary entries often stands for 'Middle English', i.e. the variety of English spoken between 1066 and 1470 AD (roughly). In these cases, 'ME' is usually followed by a Middle English word form from which the present dictionary entry derives, often together with its original meaning (i.e., as it was understood in Middle English times).

In a dictionary entry, "you" typically refers to the word being defined or described in that entry. This allows the reader to quickly identify the word under consideration.
