2. Tell them that The Bible is not like a novel, where you start at the beginning. Tell them the best book to start with is one (or all) of the Gospels

My suggestion would be to tell them about parts of the Bible they might find interesting.
There are some very beautiful stories in the Bible; my favorite is the Book of Ruth, which is very short and I think is one of the most beautiful pieces of literature in the English language (or at least it can be if the translation is any good).
A lot of people resent religion or resent Christianity, and I have found much it this is due to misunderstanding of what the Bible has in it. Sometimes it is possible to show such people that their feelings are badly placed because it is not the Bible that is wrong, but misrepresentations about it. You have to watch it with this, because there are a lot of preachers who would get heat over this one. But I point out sometimes, that the people Jesus got most angry at were people who worked in the temple, who showed off how much they prayed and how charitable they were, and who told other people what to do in regards to religion. They people he treated kindly were a Roman Centurion, a woman who had been through seven husbands and was living with a man she was not married to, a woman caught in adultery, beggars, and lepers.
There are also some interesting quotes in the Bible, such as, "And drink no longer water, but a little wine..."
