Going to church is an expression of faith that also has important cultural and traditional implications. Thus the best way to excuse yourself from church services would be to make sure everyone involved is aware of where you stand in terms of faith, culture and tradition. This could be achieved through volunteer work, community work, or evangelism, among other options. You could also just lose faith, which would be an understandable reason for not going to church.
In the short term, there are many options; feigning illness, claiming to be busy, needing to go somewhere. Basically any excuse for not going to work will be fine for not going to church. In the long term though, you will need to adopt some of the strategies from the first paragraph.

There is a difference between going to church and having a relationship with God. Not having a relationship with God can leave you vulnerable to those types of entities, but know that there are Christians who attend church regularly and are absolutely clueless as to who God is. I stopped going to church for about 6 months now and my relationship with God has been stronger than ever (and I've been going to church my whole life, 26 years). Keep your relationship with God and He'll protect you from all.

I believe that she is saying that while some may choose to flock to church on the Sabbath day, in the midst of choirs and sermons, and such, she chooses to keep the Sabbath at home, in a simplistic way with just her family. She is conveying to us that she does not need a large church service to accomodate her keeping the Sabbath, but is content to worship the Lord in her home.
To keep Life simple, you have to think 'simple' and live simply: Love your family, Say your prayers, read your scriptures and go to Church on Sundays. That should keep it as simple as you're ever going to get it.
