In general, funerals are not a long ceremony in Judaism. A long funeral would be over half an hour.

In the "good old days" it was common for the mourners to pray the rosary in common for the repose of the soul of the deceased. For the past 25 years (+ -- Vat II) since my ordination, a "wake service" to include scripture readings, prayers for the deceased and mourners is most common. From my experience, when a rosary is requested few, if any, of the mourners recite it.
You can say it any time you want. Some people say it every day. There are also occasions where all or some of it is said. A decade of the rosary might be prayed at the graveside on the day of a funeral for example. People say the rosary when they go on pilgrimage to places associated with Mary, like Lourdes or Fatima.
It's too long!
There is no reason why you should not attend. Non-Catholics can attend Catholic events. Personally, I would recommend that you attend, the Mass would be the Catholic equivalent of the funeral, and the Rosary would be the equivalent of the viewing.

Living Rosary basically means that persons take the place of the Rosary beads while praying the Holy Rosary. Each "Our Fathers", "Hail Marys" and "Glory Be's" are represented by members of the parish as they form a big Rosary in an open ground or a covered court or gym. Usually this is done on the last day of October, the Month of the Rosary. In some parishes, instead of just people, they hold on to balloons representing the beads, and tie them to straw strings. When the Rosary prayer is completed, they let go of the balloon and from the sky you will see a floating Rosary.
The visitation is the second of the Joyous or Joyful mysteries, following the Annunciation. The visitation occured between Mary and St. Elizabeth. by the way the term is used in French-speaking countries for what is normally called a Wake at a funeral home- one (visits) the deceased for the last time.
If you are talking about actually making a rosary, that would depend entirely on what kind of rosary you were making, what materials you were using, and how skilled you were. If you are talking about praying an average rosary (one set of five mysteries), then your prayer should take about twenty minutes if you are doing it correctly. The Rosary is a string of prayers so since you say "at a catholic rosary" I assume you mean this is a public event where the Rosary is said. There will probably be one person (probably a priest) leading the prayers and everyone else joining in for the last few lines of each prayer, like a chant. It could also be in latin.
