Jesus came to pay the penelty of sin and reconcile man back to God. So if they had not sinned there would be no reason for him to come in the flesh, as a man, and pay the price for man's sins.
While in the garden of Eden, God had fellowship with Adam and Eve in their innocent and sinless state. But once they had eaten of the tree of the knowledge of good and evil they had sinned and hid themselves from God. This began a separation between God and man. Thus Jesus came to atone for our sins and reconcile man to God.
