do you mean ALI OLI?

this is a garlic mayonase that comes from Spain.

It's made with 1 egg yolk, a pinch a salt, 1 clove of crushed garlic and olive oil.

1) Mix these ingredients, except oil, in a mortar (small shallow ceramic bowl) with a pestle (instrument for pounding substaces usually made of wood or marble) to a smooth paste.

2)Then very very slowly drizzle olive oil into the mixture stiring all the time with the pestle. The amount of oil depends on how much ali-oli you want.

It may sound easy but you have to practice making ali -oli as it tends to split (curdle) very easily.

This is very nice served on grilled meat, fried potatoes, toasted bread...
