The main 2 are Christmas which is the celebration of Jesus' birth, and Easter, which is the celebration of Jesus rising from the grave. There is also Black Friday which is the day the Jesus was crucified and Palm Sunday which was the day that Jesus rode into Jerusalem.

People say Happy Holidays not to attack Christianity, but to be polite, because guess what, not everyone is Christian and not everyone celebrates Christmas. So if you want to be polite, say Happy Holidays if you do not know if they specifically celebrate Christmas or not (if you know someone does then it is of course acceptable to say Merry Christmas). It is fair and polite; it groups religious as well as ethnic holidays into one.
