Only later did anyone write anything down, and the New Testament was put together, as we have it today, at the end of the fourth century. In other words, there are no "documents" from the early Church and that wasn't that important anyway, Our Blessed Lord never once wrote anything (save in the dirt with His finger), nor did He command His apostles and disciples to write anything.

I'm not familiar with the standing of a Ukrainian Catholic Church in relationship to the Roman Catholic Church. The Eastern Orthodox Church, which it may be, is currently in a 'schism' with the Church in Rome. This word, schism, is important. Any such church simply means that the Roman Catholic Church does not consider them preaching the same set of truths. When a Roman Catholic individual marries, they have a moral obligation to be married in the Catholic church. Thus, they should be married by a Roman Catholic priest who is in union with the Church.
