I'm assuming you are referring to the man most people know as Matthew.
At the time that Jesus called him to follow Him (when he was named Levi), he was a publican or tax collector. It is unknown as to what he did after his discipleship was over, besides being an apostle/evangelist.
Now, there was an apostle called Matthias that was chosen to replace Judas.
The Bible mentions Matthias in Acts 1:3-26, but doesn't answer this question. Church tradition also appears silent on the life of Matthias previous to being elected as an apostle.
