Basically, the Catholic Church understood that human beings are attached to, and need, holidays and happy events to celebrate. So, the Catholic Church replaced the pagan festivals with Holy Days that celebrate, honor and remember the life of Jesus Christ.

As Christians, God does not require that we be somber all the time and never have any fun. Not denying people their fun celebrations but instead transforming them into celebrations of Christ's life made the transition/conversion from Paganism to Christianity a lot easier. For example, Christ-Mas (the Birth of Christ) is celebrated around the time of the Winter Solstice/Yuletide even though it is believed that Jesus was really born in Spring not Winter. It doesn't really matter when (what specific date) we celebrate the events in Christ's & the Church's life, it just matters that we DO celebrate them.
