It means "baker". Seriously. For a good portion of European history, people didn't have what we would think of as "family" or "last" names. Most people had surnames that said who their father or an ancestor was ("Anderson"= "Andrew's son", "Peterson"= "Peter's son", etc.), where they were from or what their family did. The last name "Smith" means your ancestors were blacksmiths. "Cooper" means your ancestors were barrel-makers. "Thatcher" means your ancestors made straw roofs. And "Baker" means your ancestors made bread.
