Then God said: "No, Sarah your wife shall bear you a son, and you shall call his name Isaac; I will establish My covenant with him for an everlasting covenant, and with his descendants after him. (Genesis 17:19) The promise regarding Isaac is the continuation of the same promises that God madeto Abraham in Genesis 12:1-3 (and repeated elsewhere). God's promises to Abraham were mostly in the distant future. This necessitated the inclusion of not only Isaac, but his son Jacob, Jacob's 12 sons and all of their descendants. Isaac's father, Abraham, was promised: 1. The land he was living in (Canaan) 2. Would be a great nation (Israel) 3. Through his seed all of the nations of the earth would be blessed (Christ). These are repeated to Isaac and then to his son Jacob. The entire remainder of The Bible is the fulfillment of these three promises, made originally to Isaac's father, Abraham.
Abraham made a covenant with God; and God swore also to Isaac and Jacob that He would uphold the covenant of Abraham with them too. For Joseph, no such statement or covenant was made. As a sign of the covenant, Sarai's name will be changed to Sarah, meaning "princess," reflecting her role in God's promise to Abraham. God will bless her and grant her the ability to bear a son, Isaac, despite her advanced age. This miraculous birth will signify the establishment of a great nation through her lineage, fulfilling God's covenant with Abraham.
That depends upon what you mean by "chosen." Noah was chosen (with his family) by God, to survive the Flood (Genesis 6), but not for a Divine covenant of status for his descendants. Abraham was chosen by God to father a nation that would serve God and have His covenant forever (Genesis 17). It eventually became clear that out of Abraham's children and grandchildren, only Isaac and Jacob (and Jacob's descendants) would continue in God's covenant (Genesis 26 and 28). Jacob fathered the Israelites.

Abraham had to circumcise himself to show his loyalty to God. God in return promised the land of Canaan to his descendants given him by Sarah (i.e. Isaac) and that both Isaac and Ishmael would father nations that would be as numerous as the stars in the sky or grains of sand on the ground.
The land of Israel, which was at that time called Canaan. Note that this does not apply to all of Abraham's descendants, since Ishmael was not included in the covenant (Genesis 21:12) but Isaac was (Gen. ch.26). After Isaac, the covenant continued through Jacob (Gen. ch.28), whom God renamed Israel (Gen.ch.35).
Abraham, was the father of the Hebrew people. He was the son of Terah, of Ur, in what is now Iraq. At God's direction, he migrated to what is now the land of Israel. God's covenant with him and his descendants was repeated to his son Isaac, and to Isaac's son Jacob. The account of it is recorded in the first book of the Bible, the Book of Genesis. The God of Abraham, the God of the Hebrews, is Yahweh, the creator of all.

Before the time of Moses God spoke to people eg Abraham, Isaac, Jacob (Israel) so maybe there were some things written down. However it wasn't until after the exodus from Egypt that God made the covenant with the nation of Israel and that's when Moses recorded the laws of the covenant.
