Because the Birth of Jesus is the very beginning of New Testament salvation, and one of the most important events in Christian history. How could Christians NOT celebrate it?
The precise date is not really important. Its current position in the liturgical year immediately precedes the Baptism of Jesus in the Jordan, which is an older celebration than Christmas, and which is the next part of the story which Christians re-enact every year. It is also true that the Winter Solstice, a holdiay which is even older than the birth of Christ, has from antiquity been celebrated at roughly that time. Probably the date for Christ's birth and the solstice became somewhat intertwined, whether by design of the early Church leaders' efforts to co-opt and intefere with the older religions' holiday (from the top) or by social diffusion (from the bottom). Perhaps a combination... we'll never know.
