Stephenie Meyer has stated that the apple on the cover represents the forbidden fruit from the book of Genesis. It symbolizes Bella and Edward's love, which is forbidden, similar to the fruit of the Tree of Knowledge of Good and Evil, as is implied by the quote from Genesis 2:17 that is quoted in the beginning of the book. It also represents Bella's knowledge of what good and evil are, and the choice that she has in partaking of the "forbidden fruit", Edward, or choosing not to see him.

I used the scripture from Genesis (located just after the table of contents) because I loved the phrase "the fruit of the knowledge of good and evil." Isn't this exactly what Bella ends up with? A working knowledge of what good is, and what evil is. The nice thing about the apple is it has so many symbolic roots. You've got the apple in Snow White, one bite and you're frozen forever in a state of not-quite-death... Then you have Paris and the golden apple in Greek mythology-look how much trouble that started. Apples are quite the versatile fruit. In the end, I love the beautiful simplicity of the picture. To me it says: choice.Also, keep in mind that in the movie when Bella and Edward were in the cafateria Bella... being clumsy as usual, dropped an apple. But guess who was to the rescue? Edward ofcourse. The apple pops off the tip of his shoe into his hands as he holds it with care in his two hands. A short but Meaningful moment in the movie.
That is a good idea, but I also have an idea. A mango is a very soft, juice full fruit. An apple is quite hard (In ways) compared to it. (I just learned this today in school.) An apple has a carpel and the seeds are fetilized eggs. The apple is a "false fruit" because it is actually a swelling of a flower. The bud swells and an apple is the result. I'm not sure about the mango though. Sorry.
An "apple" is NEVER mentioned in the Bible as a 'forbidden fruit'. The account in Genesis simply says 'fruit', with no further identification. Though apples ARE known to grow in that area, and are mentioned in the Bible a few times (Song of Solomon 2:3, Proverbs 25:11) , it's never with the idea of being 'forbidden'.(Genesis 2:16-17) ". . .God also laid this command upon the man: "From every tree of the garden you may eat to satisfaction. But as for the tree of the knowledge of good and bad you must not eat from it, for in the day you eat from it you will positively die."(Genesis 3:6-12) ". . .Consequently the woman saw that the tree was good for food and that it was something to be longed for to the eyes, yes, the tree was desirable to look upon. So she began taking of its fruit and eating it. Afterward she gave some also to her husband when with her and he began eating it. ......"
Many people refer to it as an apple, but it is not actually known if it was a fruit known to us today. The Bible itself does not call it an apple. It is referred to as the fruit of 'the tree of the knowledge of good and evil.'
