Carthusians are a remarkably austere Order of Hermits. I imagine that the Hermits themselves built most of their Charterhouses, and they are remarkably austere, having few if any "frills". Those who designed them will remain nameless because the Carthusians would never have written them down to begin with. They do publish a book, but it is about contemplation, the reason that they exist:

Architecture of Contemplation: the charterhouse of the Transfiguration, by Robert H Mutrux, as published in: Great New England Churches, The Globe Pequot Press, 1982. (many black & white pictures)
