I assume that it is because, for Muslims, Allah (who is God) is the central figure of their religion and they hope the child will grow to love their God.
Although I am a Catholic I can see the sense in this. It makes more sense than to hope the baby says "mama" or "dada".

they only say the adhan in the baby's ear, so that is ther first thing he/she hears in english it means "god is the greatest x4, there is no god but allah x2, muhammad is the messenger of god x2, come to prayer x2, come to success x2, god is the greatest x2, there is no god but allah".
When a baby cries when it hears a strangers voice but not it's mother is not an illustrates. This just mean that the baby is comfortable about it's mother and knows her voice.
Muslims welcome baby boys with happiness but that doesnt mean that they will be sad if the baby was girl
