In religious study there is something called the "ultimate concern". It is what a religious persons main goal/thing they care for/love/cherish. I think you know what I'm getting at. Now for example in Christianity you have to love Jesus more then anything else including family, possessions, and self. So that 'self' part is the reason people are willing to risk there lives for there beliefs. Also if you might be wondering what a nonbelievers "ultimate concern" might be it would be like loving there kid more then anything but no matter what it is it would be outside of anything to do with religion. Also what you are talking about is called in layman's terms religious fundamentalism or extremism. Now a list of thing that have been caused by this- 9/11, The Crusades, the suppression of Science and human progression, the subjugation of woman, and of course lots of genocide.
