water is used because when jesus got baptised he had his hesd immersed under water. and the christian children are dirty and stinky so they need their first and last washes!! heehee

Symbols of the Holy Spirit
694 Water. The symbolism of water signified the Holy Spirit's action in Baptism, since after the invocation of the Holy Spirit it becomes the efficacious sacramental sign of new birth; just as the gestation of our first birth took place in water; so the water of Baptism truly signifies that our birth into divine life is given to us in the Holy Spirit. As "by one Spirit we were all baptized," so we are also "made to drink of one Spirit." (1 Cor 12:13) Thus the Spirit is also personally the living water welling up from Christ crucified (Jn 19:34; 1 Jn 5:8) as its source and welling up in us to eternal life. (Cf. Jn 4:10-14; 7:38; Ex 17:1-6; Isa 55:1; Zech 14:8; 1 Cor 10:4; Rev 21:6; 22:17)

Baptismal water. The water used for the administration of the sacrament of baptism. For the valid conferral of baptism any ordinary natural water may be used. But for licit administration of solemn baptism, the water should be ritually blessed. Normally, the water is blessed for this purpose during the Easter Vigil on Holy Saturday. But it may be blessed at each baptism by the one who confers the sacrament. Three ritual blessings of the water are provided by the Roman ritual, two of which include a symbolic touching of the water by the priest and alternate responses by the people.

In Water baptism, just water is used, in spiritual baptism, nothing is used, just a commitment and belief of you in God. Water baptism symbolizes that commitment (some people think that it is useful to have the Word of God (Bible) present as well)

Baptism. Baptism is the purification of water to wash away sin. Many Christians do this when they become saved by God.
Chrism is the oil used by the bishop during the Sacrament of Confirmation. Water is used by the minister (bishop, priest, deacon) at Baptism. Chrism is one of the oils used at Baptism, the other being the oil of the Catechuminate.
It is used for Baptism & for reminding us of our Baptismal promises.
The shell is an ancient symbol of baptism and is often used during baptism to scoop the water from the baptismal font. The three drops of water represent the Trinity: Father, Son and Holy Spirit into whom we are baptized.
