Because light was looked at as a bringer of life. People have known for many centuries now that light is key to having a harvest. A harvest back in those days was essential for life. There were no Super Markets to rely on, you ate what you harvested. Many Ancient cultures also acknowledged the Sun as a God. Light was pretty much the physical form or Personification of Good. It doesn't take long to see why they would associate light with religion. If light was believed to bring life, than it was a good thing. Darkness, on the other hand, was looked at as Evil. This is just because darkness could not be escaped back then. Imagine living in a world where no artificial light has been created yet. Every night would bring on complete blackness, separating them from their beloved light. Most creatures also hunt at night time, further adding to the fear of the dark for early humans. When the Sun would come up the next day, it would save them from the despair of being trapped in blackness. This is believed to be one of the main contributing factors in why light is used to describe things of good nature, and darkness as a marker of evil.
