It was not a dove that sat on the head of Jesus, at the time when John baptised him, it was a cloud in the shape of a dove above the head of Jesus and God said This is my son in whom I am well pleased.

Is realeasing doves pagan?

Actually the first recorded release of a dove was when survivors of a flood released a dove (somewhere between 6000 BCE and 2300 BCE). If the dove returned then he had found no place to then and the survivors would then know that no land was within their reach. If the dove did not come back then land was found. This is where story gets weird, the dove came back even though it had found land, proven by the dove carrying an olive leaf in it's beak.
