In Galations, what Paul meant was that pleasing man should not be our priority. We should be most concerned with what God wants. But what Paul actually says in I Corinthians is, "I become all thing to all men that I might by all means save some." In other words, he wasn't just pleasing man to please man. He was trying to avoid offending them so that he could share the gospel. His priority was still doing what God wanted.
