Matthew has a book of his own, the Holy Gospel according to St. Matthew.

However, this gospel is believed to have been written by the disciple Matthew the ex-tax collector (or someone close to him).

NOT by "Saint Matthew".

Answer
The Gospel According to Saint Matthew is generally attributed to Matthew. However, the gospel was not attributed to him until late in the second century; before this, the gospel was anonymous. Some scholars have pointed out that the Gospel clearly uses Mark's Gospel as its primary source for the life and mission of Jesus, thus proving that it could not have been written by an eyewitness. It therefore could not have been written by Matthew.
Answer
Matthew wrote only the Gospel that bears his name. He was known to be the author of that particular gospel which is why it was ascribed to him. Only books written by eyewitnesses or those who were acquainted with them were accepted as legitimate. Thus, Matthew is known to have only written one book.

Matthew was a tax collector; Luke, a physician; John, a fisherman, and we do not know what Mark's occupation was. Matthew and John were disciples of Jesus. Mark was a companion of Peter and Luke was a companion of Paul.

Matthew in the New Testament was a tax collector for the occupying Roman government. As such he was part of a hated class seen as traitors to their own people. Of course this changed when he left his job to follow Jesus.

Yes. Matthew was a disciple of Jesus. However we now know that the gospel known to us as Matthew's Gospel was not written by Matthew. Because it was originally anonymous, the second-century Church Fathers attributed the gospel to Matthew on the grounds that this name appeared frequently in the text.

How many books did Matthew write?

-----------------------The disciple Matthew did not write any books. The book now known as Matthew's Gospel was originally anonymous and was only attributed to the disciple whose name it now bears later in the second century, when the Church Fathers were attempting to establish who probably wrote each of the New Testament gospels. Scholars say that Matthew could not have been written by an eyewitness to the mission of Jesus, not least because it can be shown that the author copied approximately 600 verses from Mark's Gospel and copied substantial sayings material from the hypothetical 'Q' document. For convenience, the unknown author continues to be known as Matthew, but this is not the Matthew portrayed in the gospel.
