St. Matthew is "sainted" because we have a Gospel which may have been written by him. He was an Apostle and Disciple of Christ. And it is believed that he suffered martyrdom for the faith.

Matthew is a saint for the same reason that every Christian believer is a saint, viz. for believing in Jesus Christ and having his sins removed by the precious blood of the lamb.
