they do "bite" however i dont think they really have teeth so its more like pinching your skin with its mouth, than calling it "biting". but if it becomes scared or intimidated, yes it will. One "bit" me once. It scared me more than it actually hurt though.

Well you hold it just below its front legs but blue tonged lizards can give a nasty bite so practise on skinks or somthing smaller then move on to the big stuff
