Makes 1 cake 6 inches in diameter and is 1 1/2 in. tall

cheese filling:
3 tbsp. whipped cream
1 teaspoon sugar
1/2 cup cream cheese
sponge cake
1 tbsp. instant coffee
unsweetened cocoa
3 tbsp. hot water.

Tip: Use soft cream cheese in the mix, but if it is at all hard, microwave it until it is soft. Let it cool before it touches the whip cream!

1. Put ice in a large bowl, put a smaller bowl in that bowl and mix the whipped cream and sugar in the smaller bowl. Whisk it well.
2. Then, add cream cheese to the same bowl in step 1 when you're done.
3. Cut the sponge cake into pieces about 1/2 an inch high. Put them in a shallow pan.
4. Make the instant coffee with hot water. Brush the coffee on the pieces of sponge cake in step 3 while their still in the pan. Make sure the entire sponge cake is coated in coffee. You will not use all of the coffee.
5. Take the mix from step two and pour it on the sponge cake. Cover it in plastic wrap and stick it in the refrigerator for 1 to 2 hours.
6. Take a sifter and sprinkle cocoa on top. You're done!

*Optional: Decorate the outside of the cake with ladyfingers or biscuits!
