The TV series Kitchen Nightmares stars Chef Gordon Ramsay. The premise of the show is that he goes to struggling restaurants to see what is the cause of their operating woes. He then sets a plan for reorganizing the operations as well as renovating the restaurant and the menu. He is usually met with a great deal of resistance, usually by one of the owners or the kitchen staff.

do you mean "back to the floor" I think that is the show. I had seen it some time ago where an executive for California Pizza Kitchen was working at a restaurant location instead of in the corporate office. It seemed to be an American version of this same show?
