You're constantly checking ticket times to make sure they are not over 10 - 15 minutes and can be reminders to the cooks to see if they have started making certain dishes.

Depending on the restaurant, there might be other responsibilities for Expos such as preparing to go orders, pouring soups and portioning food. It depends on the establishment.

Again, it's a high demanding and authoritative position. It seems very overwhelming to start off but you pick up quickly on how to make your job easier.
