Stereotyping is assigning the same traits and behaviors of one person based on their race, sex, religion, etc. So instead of looking at the person as an individual, they are looked at according to the group (race, sex, etc.) that they belong to. It is like saying all black people are criminals just because some are.

Discrimination is penalizing someone in some way because there is something about them that you do not like. So if I did not like multi-colored hair, I might not offer service in my restaurant to a customer who came in with multi-colored hair. A lot of discrimination takes place due to race, religion, sex, etc.
