Brief history lesson aside, the way you slaughter animals in east Asia, is with one clean, decisive swipe, so the animal does not suffer, to at least follow SOME of Buddhism, if the convention of veganism can not be followed. Buddhists, by the way, are 100% vegetarian, the strictest Buddhists, although, the majority are ovo-lacto vegetarians. Whatever the case getting to the point; the idea of hunching over and waiting to get your head lopped off, was similar to the idea, of lopping off the head of a pig people were going to be eating. That is, to have your head cut off with your arms tied behind your back, sent the message that "we will end your life, the way the life of an animal is ended, not the way the life of a warrior is ended." If a Samurai behaved dishonorably, that was his punishment; he would not be allowed to take part in a battle where the odds against him are hopeless, that way he dies honorably, nor would he be allowed to commit sepuku. He would simply be hunched over, and have his head lopped off, as if he was an animal.
