You shouldn't, no. But it never hurts to spray it with a non-stick baking spray, anyway.

Cookie sheets don't have sides so that the hot air in the oven can get to the cookies evenly. Sides on the sheets would block the heat from accessing the cookie from all sides with the same temperature. That is what my home ec teacher told me 10 years ago.

**Yes you can. :) Me and my friend made a cake for our friend's baby shower that way. We made three layers of red velvet cake with the cookie sheet pans and put chocolate ganache in between the layers and added a little icing to cover it and covered it with marshmallow fondant. :) It was very very yummy!! I am going to make my daughter's birthday cake the same way very soon. :)

Can butcher paper be used to line a baking sheet in a hot oven?

This might work, but only if paper is greased both sides. If you have run out of baking paper, greased greaseproof or brown paper would be better alternatives
