Well... Edward is a creature. He doesn't have the normal mind of a person, so sometimes he is confused on what he is doing.
I believe he killed Jim because Jim was trying to kill his girl and him. I mean it was really a defense tool. Jim tried hurting them so Edward killed him.
It taught me that having scissors for hands is completely possible.
