Nope, you don't have to. I actually prefer not to, because it adds color to the plate and it keeps texture. It will keep the plant in more edible pieces (if you skin it it's more likely to get mushy). If it's a really big plant be careful how you cook it because the skin can get very tough and stick in your throat.

Are eggplant leaves poisonous?
Eggplants, like tomatoes, peppers, and potatoes are members of the nightshade family.
All eggplants contain certain amounts of the toxin Solanine but younger fruit has higher concentrations. Reactions to this poison are usually gastrointestinal and range from mild nausea to severe and convulsive vomiting and diarrhea. Other symptoms have been reported such as burning of the throat, cardiac dysrhythmia, headache and dizziness. Hallucinations, loss of sensation, paralysis, fever, jaundice, dilated pupils and hypothermia have been reported in more severe cases. In large quantities, solanine poisoning can cause death. One study suggests that doses of 2 to 5 mg per kilogram of body weight can cause toxic symptoms, and doses of 3 to 6 mg per kilogram of body weight can be fatal. Symptoms usually occur 8 to 12 hours after ingestion, but may occur as rapidly as 30 minutes after eating high-solanine foods.
The lowest dose to cause symptoms of nausea is about 25 mg solanine for adults, a life-threatening dose for a regular-weight adult ranges about 400 mg solanine.
The first post to this answer was completely erroneous as it stated that heat neutralises Solanine. This was dangerously misleading and I have deleted it. Heat has absolutely no effect on solanine. The best way to avoid poisoning is to 1)choose only very ripe eggplants/aubergines, 2)soak for a couple of hours in very salty warm water, rinse and soak again in tap water, 3)cook until the eggplant is very well-done (this has nothing to do with exposure to heat but rather to the breakdown in fibers and leeching out of poison this causes). Another precaution is to peel the skin.
Solanine is also present in large quantities in potatoes which appear green below the skin. Some people are fine with peeling away this green bit but the safest thing is to not use them at all. It has been reported that deep frying causes solanine to leech out of the food and into the oil. So if you insist on eating green potatoes, frying is perhaps the best option. Solanine is also present in tomatoes but recordings of reactions are very limited.
Some interesting Solanine trivia...
Sir Walter Raleigh brought potatoes to Ireland and gave a potato plant to Queen Elizabeth I as a present. However the cooks at the royal banquet, unfamiliar with the plant, threw out the edible tubers and cooked the stems and leaves which contain high volumes of Solanine. Everyone fell deathly ill, prompting potatoes to be banned from the court. It would be two centuries before Frederick the Great, King of Prussia, gave potatoes to the poor who (with the help of Prussian soldiers) agreed to eat them.
You would suffer from solanine toxicity which could cause a range of symptoms such as nausea, convulsive vomiting and diarrhea, and in the extreme, death.

Eggplants don't have separate male and female plants. Neither do they have separate male and female flowers. They are self-pollinating, meaning each flower has male and female parts and does not need another flower in order to produce fruit.
The following link has a pic showing the difference between male and female fruit. I have grown egg plant since I was a kid 35+ years and have known the difference. the Male fruit have less seed or smaller seed and are less bitter. The female fruit has a longer marking on the end of the flower blossom end of the fruit away from the stem. The male fruit has a smaller rounded spot. Some are difficult to distinguish. If you see ones at the market with a noticable longer slit mark where the flower blossom was attached leave that fruit on the shelf. It depends on where you are ! If you are in the midwest, nature will take care of things. Most farmers in the mid west do not irrigate, rainfall is adequate. Vegetables grown in their native land are usually resistant to normal weather patterns in their environment.
Growing vegetables where they aren't naturally found, means just keeping an eye on them and watering when there has been no rain. Some vegetables need more water than others. ( I avoid growing celery and cucumbers, since they require more water than most, when I am in Colorado. But in the mid west, they grow just fine. )
In any event . . . If it hasn't rained in a week, I will water my garden for about 90 minutes. ( This also depends on the water flow and the kind of sprinkling system you have. ) Poke your finger in the soil after watering. If the ground is dry 1/2 an inch below the surface, you need to water more. If it puddles between rows, chances are you need to cultivate ( stir up the soil ) so that air and water can get to the roots easier.
There are a lot of factors . . . it SOUNDS complicated, but once you get the feel of it, you will be a pro in no time at all.
If the plants are wilty looking .. . Water them !
Also . . . avoid watering in the heat of the day ( 10 to 4 o'clock ). Morning watering be best, or early evening.

Why eggplant will not produce eggplant from flower?
If your tomato plants are not producing anything (except blossoms), you might have a pollination problem, or you might have planted seeds from a store-bought tomato that have been cross-pollinated and are more or less sterile. This presumes that they are blossoming but are not producing fruit.
If, on the other hand, your tomato plants are producing fruit but are performing poorly, they are underfed, underwatered or you have not pruned them properly. Make sure you feed them a good general purpose fertilizer two or three times after the plants have developed, and most importantly, prune them heavily!!!
