Hi, I have a son who when he was younger had sensory issues and had a very limited diet.
We allowed it until around 8 years old when I went to a seminar and was told around 8 the taste buds change and that's a good time to introduce new foods.
What we did was:
Introduce foods outside of eating times to eliminate meal times being a battle or stressful.
The first time the food is introduced, all our son had to do was touch it with his finger(s).
We talk about texture.
2nd time introduce the same new food and we had our son smell it as well.
We over praise when he did it. When he showed fear, we would either back off or do what we were asking him to do to show him there was nothing to be afraid of.
3rd time introduce the food, our son could lick it.
4th time, we asked him to bite it.
After doing this a couple of times, and he realised he wasn't going to gag on everything he put in his mouth, he started looking forward to trying new foods and we were able to put a new food on a small plate beside his dinner plate.

It wasn't actually made in France. Some think it was discovered in a Italian-Latin recipe book in the 4-5 century: the Apicius, It was simply entitle (translated from Italian) "Another Sweet Dish". In Germany it is called Armer Ritter, which means poor knight. Back in Medieval times the knights didnt have enough money for meat, so they soaked their stale bread in egg and milk and cooked it. In Hungary it is called: Fluffy Bread. In Spain they soak it in wine instead of milk for extra flavor. In Italy they put tomato sauce and cheese. In Belgium they put ice cream on it as a dessert.

The French might well have invented French Fries had not the Belgians beaten them to it. It is noteworthy that although frites are the most popular way of eating potatoes in France, the French are always willing to give credit to the Belgians for them.
On the other hand, the French have no desire to take credit for "French Toast". They did not invent it, or name it, they do not eat it and there is no word for it in French, except possibly 'degeu'. It probably came from the USA, but no-one there wants to take the blame credit for it either.
