Fried chicken isn't supposed to be soggy. It's supposed to be crispy. who ever made soggy fried chicken didn't let it cook all the way, or you have fried chicken mixed up with some other chicken. The main reason a batch of fried chicken is soggy is that the temperature of the frying oil/grease is not kept hot enough (about 350 deg. F or 177 deg. C), thus allowing the chicken to absorb more oil/gease than desired. Even though the oil/grease might intially be at the desired temperature but if the cook crowded the pan with too many chicken pieces, the frying temperature would be lowered, creating the soggy condition in the chicken.

Original:Buy Bisquick mix and follow directions on back for waffle batter. Bisquick is as close to handmade as you can get without completely making them from scratch. Bisquick is just the dry ingredients already mixed together for you. Anyway, after you make the batter, you pour it in the greased waffle iron (you need a waffle iron to make waffles) and just pour enough to cover the iron (knowing exactly how much will come with practice). Then, depending on how hot your particular waffle iron is it will take at least 3-4 minutes and DO NOT open too soon or you will mess up your waffle. The waffle should be golden brown and there should be no raw batter. Then add whatever toppings you want and enjoy!

Homemade Waffle Recipe:

1 3/4 cups All-purpose Flour

2 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

3 egg yolks, beaten well

3 egg whites, beaten until stiff

1 1/2 cups buttermilk

1/2 tsp. Vanilla extract

1/2 cup unsalted butter, melted

In large bowl, mix together dry ingredients. Fold in beaten egg yolks, stiff egg whites, buttermilk, and vanilla. Once combined, add melted butter and stir. Do not over-mix. Preheat waffle iron. Pour batter into waffle iron, and cook until golden brown. Serve with favorite toppings (warm syrup, butter, fresh fruit, powdered sugar, etc...)

Waffles have grid patterns because they are baked in a waffle maker. Waffle makers have dimples that press into the batter creating the pattern. The pattern for what ever the reason is excellent for trapping melted butter and syrup.

Waffes have more of a creative look, and in my book, taste better. Pancakes are just a flat, boring look.

The cooking plates on some waffle makers reverse and are flat on the other side. As far as using pancake batter in the waffle maker, the mix is a little different and I think it would probably stick and not come out. You can always try some to see.

You can use pancake batter to make waffles. I do it all the time. The only thing I change is I add a little oil to the batter and mix it in. It works perfect you can even do this with the store bought batter mixes for pancakes.
