If you put it in in the automated fashion, it will keep updating the date, so that every time you print it, it will have the date of that day. Sometimes you want to do that, whereas other times you want to always have the original date. That is when you would type it in. With page numbers, they will automatically update as a document changes and put new page numbers in automatically as it gets bigger, saving you the need to do it.

If you have inserted the system date into a document (as opposed to merely typing it in), selecting that option means every time the document is viewed or printed, the current date at that period will be displayed. If not selected, the date as of the time it was inserted will be displayed.
Headers and Footers are used for automatically putting things on every page on a document or on alternating pages, without having to put them in page by page. In a book you will have the number on every page. That is done by putting them into the Footer or Header. Sometimes you will see the name of the book or the chapter on every page. That is done with Headers and Footers. Sometimes the pages will alternate, with different things on odd and even pages. Sometimes you have the name of the book on one page, and the chapter on the other page, when you have the book open. Using Headers and Footers you can put other things automatically for every page, like the date or the time, or the author of the document.
