Typically you will get a popup when a message arrives if you want to use a particular app "Just Once" or "Always". If you choose always, any more messages will default on whichever you chose. If it doesn't indicate how you can make it your default, you can go to Settings>Apps then find the app and go into App Info. From there, you can set it as your default.
