It has to be done through the file properties. If you open the file properties, which can be done through the File menu, then you can changed the properties, including the author.

Excel is not a file manager. However, you can organize Excel files by storing them in folders for specific purposes.
If you do not include an optional argument, Excel will use the default value for that argument.
