Text messages all get sent through a central server and are stored before they reach the recipient. When they are deleted they are deleted and cannot be retrieved from your phone
Alltel can retrieve text messages as far as four months back. The numbers called and texted can be retrieved much further back.
Your Sim card doesn't immediately erase a file once you delete it. Instead it just frees up the space that was occupied by that file (massage) and lists its space as available re-usable space. However until that space is overwritten by new data, in your case new messages, phone numbers etc., your old deleted file is still there and can be recovered.
